[Meatless Monday] BBQ Tempeh Sweet Potato



You know what flavors go surprisingly well together? Barbecue and sweet potato.

I started with a smothering some tempeh in barbecue sauce (I really want to try making this homemade stuff!), baking a sweet potato via the microwave, then added some sauteed onion, kale, and corn. Finally, it was topped with a bit of cheddar cheese and extra barbecue sauce :-) Rather than using tempeh, you could also swap in lentils, black beans, or your favorite protein.

This is a super simple easy-make dinner...which I'm seriously in need of this week, as its my WEEK ONE of the Seal Team PT Basic Fitness Class. Boyfriend has been doing this workout program for about a year, and he's finally convinced me to give it a shot! He never stops talking about how fun the workouts are and supportive the group is (not to mention how sore he is ALL THE TIME).

I'm going into it with an open mind--and a stomach full of nerves.

  1. Eek! Good luck! I'm trying to think of some fitness classes I want to try out this summer. I definitely need a butt kicking :-)
