[Meatless Monday] Mushroom & Spinach Grilled Cheese

Sorry, team. Its the last week of May, and I'm seriously slacking. All month I've been consistently posting Meatless Monday meals...and here we are, Tuesday, and no meatless meal. On top of that, one of my secret May goals was to post more than I did in April. I almost lost it. Don't worry, this is officially my TWELTH May post; and I'm hoping to have one more before June rolls on in!


I'm hoping I'm not the only one confessing that it was a slacker weekend and its about to be a slacker week (hello, 4-day work week!!!). I officially had meat EVERY SINGLE DAY this weekend, and my weekend was 4 days long (yikes). Sometimes it just requires too much effort to satisfy Boyfriend and fight my inner carnivorous cravings at the same time. (Yes, they still exist!) But I'm happy to report that after 4 days of "why nots?", I'm happy to jump back on the bandwagon and continue on with my flexitarian ways.

But for now, in spirit of slack, I'm giving you a late Meatless Monday meal that requires no recipe and is a little too obvious of a meatless meal option: The Grilled Cheese Sandwich. Mine is stuffed with sauteed onions, spinach, baby bella mushrooms, and gruyere cheese (one of my favs). For the pictured sandwich, I used my oatmeal buttermilk bread.

Just chop/grate, saute, butter, stuff, grill, and know that the presence of veggies is a move in the right direction.
