This weekend was unique in that I stayed in Williamsburg by myself (no Boyfriend!) to assist with Phi Mu's officer training at W&M. It was a great experience and I'm so excited for this new group of leaders to help transform their sisterhood even more...but by the end of the 12 hours, I was ready to be free!
All weekend I had also been staring out the window at the cold rain and complete absence of sunshine. I needed something to relax and warm me up. With it being only 2PM on Sunday and no real plans for the rest of the day, bread seemed to be the answer. Also, I had buttermilk in my fridge STILL. Perfect for this oatmeal buttermilk sandwich bread!
I didn't take any process pictures. I figured that you know what rising dough looks like. The end result, however, looked a little like this...
I'm always ridiculously thrilled when something "homemade" looks like the real thing you buy at the grocery story. And does this not look like a real loaf of yummy healthy bread? And you can really use it to make homemade sandwiches!
It is some yummy stuff. Its a little more crumbly than your typical Wonder Bread, but the texture is still soft. If I made it again, I'd probably add more honey to the dough, I keep on eating it and expecting it to taste like honey wheat, but the slight sweetness isn't quite there. I went ahead and froze half the loaf (man, I'm loving my freezer lately!) so that I wouldn't accidentally eat all of it in one week. With the oats and wheat flours, its good for you...but not THAT good!
