MM Monday: Eggs & Rest Week Advantages
*Welcome to a MM (Meatless & Marathon) Monday post! Starting in August, my "meatless" Monday posts will also include updates as I train for my first marathon! This challenge is part of my 2013 Personal Goals (check out my progress here). I will be running the Anthem Richmond Marathon on November 16th.*
As I mentioned in last week's post, we just wrapped up a "recovery week"...that I unintentionally took full advantage of. First in the long line of missteps, I was late (by a minute!) and missed my typical Seal Team workout Monday evening due to traffic. Although angry, I took advantage of the extra time by running a few errands and pushed myself out the door to do a few miles just so I could sweat some (read: 2 miles max). Tuesday's early morning run went off without a hitch. Getting to sleep-in 20 extra minutes was heavenly--almost made me like 5:45AM workouts. Almost. I didn't exactly take it easy on my pace, but I was comfortable which is what matters (and probably due to lack of workout Monday). Then came my other weekday run on Tuesday...or Friday morning...which didn't happen. This was a big oops, blamed largely on lack of sleep from baking for Boyfriend's birthday. I once again tried to remedy the situation by doing a very rainy 20 minute jaunt before dinner Friday night.
My super-recovery week hit it's climax Saturday morning, when we awoke with a startle an hour after my alarm was supposed to go off. Our scheduled 1.5 hour / 8 mile run turned into a rush 7.5 mile run along the James River...which was actually not so terrible. In some stroke of kindness, Boyfriend decided to actually run with me (I'm understandably left in the dust on most of our "runs" together).
The remainder of Saturday included his birthday activities: tubing on the James, cookout, and bars. It was a beautiful weekend for it and very well timed. (I'm looking forward to not being able to do much on Sundays we do 18-20 mile runs. NOT.)
I'm not proud of my slack this past week, but I am happy for the opportunity it provided. From the beginning when I first registered for the marathon, I'd been asking Boyfriend to sign up as well. I knew it was going to be a journey (read: struggle) for me and thought it would be awesome for us to experience it together. Now that we're here--one month of training down--I really like how we're doing as a result of it. We aren't side-by-side every run or aggressively pushing each other to new levels, which I really appreciate. Instead, we are supporting and encouraging each other as each little challenge, annoyance, uncertainty arises. I'm very thankful to have him by my side, mentally. I also think we're learning and accepting more about each other in the process.
Now...since there's supposed to be a meatless element to this weekly post, let me tell you: I'm been loving the crap out of some EGGS lately.
Example A (start of post), a quinoa bowl from Goatocado, a food cart/truck in Richmond specializing in fresh, wholesome food. While they're normally on VCU campus during the week, they can be found at South of the James Farmers Market on Saturday mornings, which is where I finally got to try them last week! If I remember correctly, this bowl had: quinoa, arugula, black beans, onions, apples, cheddar, avocado, barbecue drizzle, and an easy/medium fried egg. I wasn't completely sold on the black bean & apple combo; but for a starving post-run tummy, it really hit the spot...i.e. I shoveled it straight into my mouth in about 3 minutes. Seriously, it was the PERFECT recovery meal. And, for the record, I've totally been brought over to the runny yoke "dark side".
Example B, fried green tomato benedict on Sunday. My parents drove down to Richmond and offered to take me out to brunch. Perfect summer weekend = outdoor dining, and Water Coastal Kitchen (formerly Water Grill) has one of the best brunch patios. Runny yokes, creamy sauce, crunchy bacon, tangy tomatoes, buttery biscuit...needless to say: I died.
