
When I said I hadn't baked anything in my new apartment yet, I wasn't exactly telling the truth. I'd tried making a few things, namely: yellow cake, red velvet chocolate chip cookies, and apple cinnamon oatmeal cookies. The reason I'm admitting to this now is because the last recipe finally resulted in something I can consider a relative success.
But, seriously, what is going on here?!
Attempt #1: I overcooked the cake and it stuck to the pan horribly. Fortunately, I was able to make it look pretty and it still tasted like (a slightly dry) vanilla cake.
Attempt #2: I unconsciously added an extra stick of butter to my first batch of red velvet cookies. Literally, I was laying in bed after baking them and it hit me, like a bolt of lightning. Damn. I had high hopes for the second batch, made with the "correct" amount of butter; however, they resulted in thick hockey pucks. Really...REALLY?!
Attempt #3: (last Thursday) I took a brown sugar cookie recipe and subbed in oats for some of the flour. I suppose I should have known that they aren't exactly interchangeable; I must have been high on brown sugar. The cookies emerged as flat and lacy apple-studded blobs. Sometimes I eat a whole bunch of my baking blooper in the hopes that it will then magically transform into the perfect baked good I was picturing. For the record, it never fails...to give me a stomachache.
At 10:00PM, I was disappointed but determined; I had to make an eatable cookie to bring with me to work on Friday. One hour later: I was in bed with real apple cinnamon oatmeal cookies cooling on my counter. At last, sweet satisfaction.

These cookies are super soft, I'd actually maybe call them "tender". They are not overly sweet, and perfectly spiced for my taste; and the little bites of apple are a nice seasonal surprise---SOOOO much better than raisins (ew!).
1/2 cup unsalted butter, room temperature
1/2 cup brown sugar
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 cup white whole wheat flour
1 1/4 cups old fashioned oats
1/4 teaspoon cinnamon
3 shakes nutmeg
2 shakes ginger
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 fuji apple (or apple of choice), chopped medium fine

Apple Cinnamon Oatmeal Cookies
Servings: ~24 cookies
1/2 cup unsalted butter, room temperature
1/2 cup brown sugar
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 cup white whole wheat flour
1 1/4 cups old fashioned oats
1/4 teaspoon cinnamon
3 shakes nutmeg
2 shakes ginger
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 fuji apple (or apple of choice), chopped medium fine
- Preheat oven to 350 degrees. In a standing mixer, cream butter and sugars together for 3-5 minutes or until fluffy. Add egg and vanilla; mix until well incorporated.
- In a separate bowl, combine flour, oats, spices, salt, and baking powder/soda. Add dry ingredients to wet and mix until just combined. Stir in chopped apple.
- Scoop dough onto baking sheet (1 cookie = ~2 tablespoons); bake 10-12 minutes or until slightly browned on the edges. Let cookies cool on baking sheet for 5 minutes before transferring to a cooling rack.



These sound/look amazing!! They are definitely next on my to-bake list!!
