[Meatless Monday] Hummus Sandwiches

Maybe its a little late in the season to talk about it, but I'm going to do it anyways: Summer should be about fast and fresh meals.

Yes, macaroni & cheese and hot dogs & burgers are awesome summer cookout foods. However, they don't exactly make me feel energized and clean after eating them. Fast and fresh meals do. And with so many ripe fruits and vegetables during these warm months, its easy to chop, toss, and season ingredients into great meals without even having to turn on an oven or fire up the grill.



This sandwich is mainly for summer days when I feel the need to bite into my meal. I love salads, but don't you sometimes just feel more satisfied holding your meal in your hands?

My typical sandwich includes:
  • Plain hummus, topped with cilantro
  • Avocado, seasoned with salt & pepper
  • Sliced black olives
  • Sprouts
  • Hanover tomato slices--don't even get me started on how good these are right now!!!
Hummus sandwiches: Even cherubs want in on the tastiness (?)


This sandwich is so very versatile; just add hummus and whatever vegetables you have in your fridge, garden, and/or cabinet. Here are some other topping ideas:
  • Zucchini
  • Peppers
  • Carrots
  • Onions
  • Greens
  • Eggplant
  • Mushrooms
  • Cucumbers
  • Dijon mustard or other sauces
  • Pickles... 
I really love this sandwich because it goes off the idea of using hummus as a condiment, rather than what its normally classified as: a dip. In the absence of deli meat, it acts as the main source of protein in this sandwich too, so pile it on! I use about 3 tablespoons in my hummus sandwiches.






Also, another tip: make sure to season your avocado and/or tomatoes with salt and pepper--it makes a world of difference!

  1. YUM!!! I love sprouts. And hummus. And basically everything you put on that sandwich. You know how I love my veggies! :)
