*Sigh.* Will pizza ever be good for me?Remove most of the cheese, replace the protein, add in some whole grains, and I think there might actually be some hope...
This pizza, although a far cry from the bubbly, melty, and delightfully fatty delivery special, is still (believe it or not) quite satisfying and flavorful. Also, wouldn't you agree that using hummus as a condiment is exciting?!
This meatless meal is easy to throw together and requires only a little bit of planning--main decision: make your pizza dough or run out to the store and buy some. Personally, I get a thrill out of making my own during my lunch break.
Remove one simple step (no feta) and you have yourself a vegan meal.
Not enough veggies for ya? Add some more! PILE THEM ON. Zucchini, corn, artichokes, peas, spinach, avocado (after cooking), carrots...anything really. Go wild!

Hummus Pizza
A Pursuit of Sweetness Original Recipe
Servings: ~3-4
1 batch pizza dough
1 cup hummus of choice (I used spinach artichoke)
1 cup cherry tomatoes, halved
1 cup mushrooms, sliced
1/2 tablespoon Smart Balance, or butter
1/3 cup feta, optional
1 tablespoon garlic-infused olive oil
Salt and pepper, to taste
Additional veggies, optional
- Preheat oven to 450 degrees and place a piece of aluminum foil on a baking sheet (or just plan on baking on a pizza stone per your typical process).
- In a pan over medium heat, saute mushrooms and tomato halves with Smart Balance for a few minutes until just tender. Season with salt and pepper, and remove from heat.
- Stretch/roll dough out into a circle or rectangle, and drizzle olive oil on top. Use your fingers or a brush to distribute to the edges. Next, top with hummus; and using a spoon, spread to about 1 inch from the edges. (Add more hummus, if needed.) Top with sauteed mushrooms and tomatoes, along with feta. Bake for 12-15 minutes, or until crust is lightly browned.
