[Meatless Monday] Portobella Black Bean Burger Panini


Today's Meatless Monday meal is perfect if you had a chance to make the no-knead focaccia bread I posted last week. This portobella black bean burger panini is high in flavor and texture, and oh so satisfying.

The highlight of this meal? The burger...it was thebombdotcom. And guess what? There's oats in it! Muhahaha. I told you, I can't get enough oats. I'm starting to think they actually seek me out.

Ok, so the deets on this meal?

  • No-knead focaccia
  • Portobella black bean burger from Chez Cayenne: I halved the recipe (using the oat option) and made 5 mini burgers, which equalled about 120 calories/4 grams fiber/6 grams protein per patty...also, these are totally freezable!
  • Quick homemade guacamole: 1/2 avocado (smashed), 1 tablespoon yellow onion (chopped), 1 teaspoon jalapeno (chopped), juice from 1 wedge of lime (1/6 lime), pinch of sea salt
  • Mexican Blend shredded cheese


Layer and smoosh it all together in a panini press (or Foreman grill, like I did). Don't skip the quick avocado spread either. Its essential, and in season!

Mission: Semi-Sophisticated Fiesta in my mouth, complete!
