The highlight of this meal? The burger...it was thebombdotcom. And guess what? There's oats in it! Muhahaha. I told you, I can't get enough oats. I'm starting to think they actually seek me out.
Ok, so the deets on this meal?
- No-knead focaccia
- Portobella black bean burger from Chez Cayenne: I halved the recipe (using the oat option) and made 5 mini burgers, which equalled about 120 calories/4 grams fiber/6 grams protein per patty...also, these are totally freezable!
- Quick homemade guacamole: 1/2 avocado (smashed), 1 tablespoon yellow onion (chopped), 1 teaspoon jalapeno (chopped), juice from 1 wedge of lime (1/6 lime), pinch of sea salt
- Mexican Blend shredded cheese
Layer and smoosh it all together in a panini press (or Foreman grill, like I did). Don't skip the quick avocado spread either. Its essential, and in season!
Mission: Semi-Sophisticated Fiesta in my mouth, complete!
