I got an idea in my head this winter that I was going to revolutionize "the smoothie". I had a plan to make a warm smoothie...with oatmeal...for breakfast. I tried it once, and wasn't quite pleased. And then *poof* winter disappeared, as soon as it came. However, I never gave up on my oatmeal smoothie.
Then one day a few weeks ago, when it was warm and summery out, I took my handheld blender and made one. I included some of my favorite things---peanut butter and Greek yogurt---and then what's a smoothie without some fruit???
And so my PB&J Smoothie was born! Delicious, nutritious, and refreshing. The oatmeal gives it a unique texture and definitely helps provide a real "peanut butter and jelly" taste. Plus, at about 350 calories and 20 grams of protein, this smoothie beats a sandwich for breakfast any day of the week!
Of course, I put it in a cute mason jar and toted it to work with me. Everything is cuter in a mason jar; wouldn't you agree? ;-)
PB&J Smoothie
A Pursuit of Sweetness Original Recipe
Servings: 1


1/4 cup quick oats
1 tablespoon ground flaxseed
1/2 tablespoon wheat germ
1 cup skim or almond milk
1/4 cup plain Greek yogurt
1 tablespoon peanut butter
1/3 cup frozen mixed berries
1-2 teaspoons brown sugar, or sweetener of choice
Pinch of salt
- Add all ingredients into a blender and blend until well combined
